CHICKEN MARGHERITA

Ingredients :
4 boneless, skinless chicken breast halves
1 tbsp. olive oil
4 slices fresh or packaged mozzarella cheese
2 tbsp. thinly sliced fresh basil leaves
2 cups tomato sauce
3/4 cup of penne paste

Method :
1. measure the sauce, mozzarella and penne
2. season chicken,if desired, with salt and black pepper
3. heat oil in 12-inch nonstick skillet over medium-high heat and brown chicken, turning once about 5 minutes
4. add tomato sauce and simmer covered 5 minutes or until chicken is throughly cooked
5. top chicken with cheese, then let stand until cheese is melted, about 1 minute. Garnish with basil
6. in a pot, boil the water, add penne pasta and cook 20 minutes
7. serve with hot cooked penne pasta tooped with additional tomato sauced, heated
